Curried Turkey Salad

2 cups finely chopped leftover turkey
1/3 cup finely diced celery
1/4 cup chopped walnuts
1/4 cup dried cranberries
2 tsp. curry powder
salt and pepper to taste
1/3 cup 2% Greek yogurt
1 tbsp. mayonnaise
butter lettuce
2 slices whole grain bread

In a medium bowl, combine turkey, celery, walnuts, cranberries, curry powder, salt, pepper, yogurt, and mayo. Mix until everything is well incorporated.

When you are ready to build your sandwich, layer the butter lettuce on the bottom layer of the bread, top with turkey salad, pop on the top and enjoy!

*You will have enough salad to make more then one sandwich.

Turkey Club Sandwich

2 slices of whole grain bread (sourdough is also great)
1 tablespoon of mayonnaise
big handful of baby spinach
2 ounces leftover turkey
2-3 slices of tomato
2 slices organic, nitrate free bacon
1/4 avocado, sliced

Divide the mayo between the top and bottom of your bread. Layer the bottom of the bread with baby spinach (I like to pile it on!).

Next layer on the tomato, turkey, bacon and avocado. Pop on the top and gently slice in half. Enjoy!

Turkey Apple + Cheddar Sandwich

1 tablespoon whole grain mustard
1 tablespoon of hummus
big handful of fresh arugula
2 ounces leftover turkey
1 ounce sliced cheddar cheese
1/2 small green apple, thinly sliced
2 slices whole grain bread

Spread the mustard on the bottom half of the bread and the hummus on the top half of the bread.

Layer arugula over the bottom half then top with turkey, cheese, and apple. Pop on the top and enjoy!
