Hey, guys! Today I am sharing 3 HEALTHY INSTANT POT BREAKFAST RECIPES – Instant Pot Egg Bites, Instant Pot Pancake Bites and Instant Pot Oatmeal Bites. All 3 easy breakfasts are made in the same double silicone mold.

Talk about healthy meal prep! You can meal prep dozens at a time, freeze and reheat later. I swear kids will eat anything in a small muffin form so these bites are perfect for back to school and year round. Let’s do it!

EGG BITES MOLDS

I have these egg bites mold They come in a package of 2 and have silicone lids that can be cooked with. When you buy molds make sure lids are not plastic, you need at least 1 to put between the molds.

INSTANT POT EGG BITES:

➡️Ingredients:
* 9 large eggs
* 1/4 cup milk or water
* 1/2 tsp baking powder
* 1/2 tsp salt
* Ground black pepper, to taste
Toppings Ideas:
* Chopped spinach
* Diced bell pepper
* Diced mushrooms
* Grated Parmesan cheese
* Grated sharp cheddar cheese

INSTANT POT PANCAKE BITES:

➡️Ingredients:
* 1 large egg
* 1 cup any milk
* 1 tbsp oil
* 2 tbsp maple syrup
* Splash of vanilla
* 1 tsp baking powder
* 1/4 tsp salt
* 1 1/4 cups whole wheat or spelt flour (don’t sub)
* 1 cup diced frozen mango, chocolate chips or berries (add a bit more maple syrup for berries)

INSTANT POT OATMEAL BITES:

➡️Ingredients:
* 1 large egg
* 2 1/4 cups any milk
* 1/4 cup maple syrup
* Splash of vanilla
* 1 tsp baking powder
* 1/4 tsp salt
* 1 tbsp chia seeds (optional)
* 2 cups oats (I used quick cooking steel cut oats
* 1/4 cup raisins

➡️Instructions:
1. Into 6 or 8 quart Instant Pot, add 1 cup water. Mold won’t fit into 3 quart Instant Pot.
2. In a 4 cup measuring cup, add ➡️ EGG BITES: Eggs, water, baking powder, salt, pepper and whisk well. PANCAKE BITES: Egg, milk, oil, maple syrup, vanilla, baking powder, salt and whisk. Add flour and whisk well. Add fruit or berries into each mold. I know I mix it into batter in the video but I realized topping after is easier. No need to stir. OATMEAL BITES: Egg, milk, maple syrup, vanilla, baking powder, salt, chia seeds and whisk well. Add oats and raisins and stir.
3. Spray molds with cooking spray and divide mixture evenly between 14 openings.
4. EGG BITES: If you would like, add toppings & don’t to stir.
5. Close each mold with a lid, stack them and then place on a trivet with handles.
6. Put trivet inside Instant Pot, close the lid, set valve to Sealing & Pressure Cook on High for EGG BITES: 8 mins. PANCAKE BITES: 12 mins. OATMEAL BITES: 15 mins.
7. After do Quick Release by turning the valve to Venting. With oven mitts on, remove the molds.
8. Open the lids, cool off 5-10 mins and using small spatula go around the edge staying close to the walls of each opening and release bites one by one.

TIP: If you would like plain egg bites w/o toppings, add a splash of milk into each mold and load inside with cheese. It becomes gooey cheese stuffed egg bite.

HOW TO REHEAT BITES: Microwave for 1 – 1.5 mins from frozen or 30 secs for fresh. Microwaves vary.

HOW TO FREEZE BITES: Cook, cool and pop in a container or bag and freeze for up to 3 months.
