4 ONE POT MEALS | SIMPLE, HEALTHY + LAZY BEGINNER VEGAN MEALS | ILHAN. A

Hey guys, welcome back! So we’re doing veganism for a month and so I thought I’d share what we’ve been eating! I hope you enjoy it! 🙂

Quinoa – serves 4

1 red onion, diced
2-3 garlic cloves, chopped
Vegetable stock cube
1 red pepper, diced
1 cup canned kidney beans, rinsed
1 1/2 cup rinsed and soaked quinoa
2 tsp cumin powder
1 tbsp smoked paprika powder
2 tsp chilli sauce or flakes
350g chopped tomato
1/2 lemon, juiced
1 cup water
Salt to taste

In a shallow pan, fry the onions and garlic in some hot olive oil. When soft add the spices and salt. Stirring well. If you feel the pan needs more oil, add a little water. Add the peppers, beans, quinoa and tomatoes. Using the tomato can/jar add a cup water and add this to the pan. Mix well and leave to simmer on low until the quinoa is thoroughly mixed. At any point if you feel the mixture needs more water add it in small quantities. When cooked, add the chill, some lemon juice and chopped coriander. I love to serve this on roasted sweet potato but can be ate on his own! Garnish with Avocado, lime juice and more coriander!

Spinach Pesto – serves 2-3

Handful spinach, about a cup or so
3-4 cloves garlic, peeled
1/2 cup line nuts
4 tbsp olive oil
1/4 or 1/2 avocado
Salt
1/2 lemon, juiced
1/4 water

Add all ingredients to a blender and blend. The consistency should be that of pesto, if you feel it is too thick add more water, and too thin add more spinach. Serve on hot pasta with a little helping of nutritional yeast! Keeps in the fridge for up to 4-5 days!

Mac and Cheese – serves 4

Cashews
1 cup nutritional yeast
1 cup plant milk, I used oat milk
1 tbsp Garlic powder
1 tsp Nutmeg
1 tsp Paprika
1 tbsp Turmeric
Salt to taste

Soaked some cashews in hot water for 5 mins. Drain and add to a blender along with all the other ingredients. Blend. Add to hot pasta and serve with an extra helping of nutritional yeast! Keeps in the fridge for up to 4 days!
