Ingredients:
Baked Potato Nachos:
• 3 Potatoes 
• 2 tbsp Karmiq Olive Oil
• 1/2 tsp Dried Rosemary
• 1/2 tsp Dried Thyme Leaves
• 1/2 tsp Paprika Powder
• Golden Harvest Sea Salt To Taste
• Golden Harvest Black Pepper To Taste
• 1 cup Cheddar Cheese
• 1/4 cup Sour Cream
• 1/4 cup Pico De Gallo Style Salsa 
• 1/2 cup Green Onions
• 1 tbsp Fresh Coriander Leaves

Green Nachos:
For Sour Cream Dressing:
• 1 cup Hung Curd 
• 1 tbsp Chives 
• 1 tsp Karmiq Extra Virgin Olive Oil 
• 1 tbsp Cream
• 1 tsp Garlic 
• Golden Harvest Salt To Taste
• Golden Harvest Black Pepper To Taste
• 1 tbsp Lemon Juice

For Nacho:
• 3 leftover Roti 

• 1 cup Sprouts

• 1 cup Iceberg Lettuce 

• 1/2 cup Romaine Lettuce 

• 1/2 cup Sour Cream Dressing 

• 1/2 Avocado 

Method:
Baked Potato Nachos

Preheat oven to 200 degrees.

Wash and dry potatoes, leaving skin on.

Slice potatoes into 1/4 inch rounds and place in a large bowl.

Drizzle olive oil, rosemary, and thyme over potatoes. Stir to combine.

Place potatoes in a single layer, on a greased baking sheet. Bake for 20 minutes, turn over, and continue baking for an additional 20 minutes.

Remove potatoes from baking sheet and place on a flat-sided cast iron skillet, slightly overlapping the edges.

Sprinkle with cheese and return to the oven for 3 to 4 minutes, or until cheese is completely melted.

Sprinkle with green onions and cilantro, and serve with  sour cream and salsa.

Green Nachos
1. Combine together to make a dressing consistency. 

2. Cut the roti in triangles, season with some salt and brush with some oil.

3. Bake it in the oven for 180’C for 8 minutes or until crispy and golden brown.

4. Once baked, sprinkle some chilly powder and toss. Let it cool.

5.Take a deep dish, arrange the  roti chips. 

6. Assemble the veggies.

7. Top with sour cream dressing and serve !
