Today I am making Caldo Xochitl which is a type of Mexican Chicken soup. The broth is light but flavorful and the fresh and cooked vegetables , chicken and toppings make this a delicious soup.

2 lbs chicken breast (cooked and shredded)
3 1/2 quarts water (or chicken broth)
1 dried bay leaf
1 small to medium carrot
1 celery stick
3 to 4 cloves garlic
salt to taste
15.5 oz can of chick peas (drained and rinsed)
1 medium to large Mexican squash (diced and sautéed)
2 Roma tomatoes (seeds removed and diced)
cooked rice for serving in the bowl
1 fresh avocado diced (for topping)
1/2 small onion diced (for topping)
fresh cilantro chopped (for topping)
fresh jalapeño (for topping)
fresh squeezed lime (for topping)
