Chinese Leftover Beef Stew Recipe (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

A heartwarming dish for your family and friends, or just for yourself!

3 carrots
250g Beef leftover from a roast
2 potatoes
1 Tbsp sugar,
1 spring onion,
½ cm ginger,
4 cloves garlic,
½ Tsp ground red pepper (Sichuan pepper)
2 Tbsp dark soy sauce
1 Tbsp cornflour in 20ml cold water

Cube the beef into bite-sized pieces
Chop the carrots & potatoes
Chop the ginger, garlic & spring onion
Place the carrots and potatoes into a pan
Boil for 15 to 20 minutes until soft
Remove from heat and drain
Heat 2 Tbsp oil in a wok
Add garlic, ginger, ground red pepper and half of the spring onion & fry for few seconds
Add beef, carrots & potatoes & stir fry for few seconds
Add the soy sauce, stir-fry for a minute
Add 50ml of boiling water
Add salt to your taste and sugar
Stir and simmer for 2 minutes
Pour in cornflour mixture to thicken the liquid
Stir until the liquid is thickened
Sprinkle the rest of the spring onion
Transfer to a dish and serve
