Vegan Thai Coconut Pudding Recipe:
1/4 c Tapioca pearl (60g)
1 cup carton coconut milk
½ cup full fat coconut milk
1/4 c sugar
1 tsp vanilla
pinch of salt
Soak the tapioca in water for at least 20 minutes. Strain the mixture and then over medium heat add in the coconut milk sugar, tapioca and salt and heat until simmering. Reduce the heat to a low and allow it to simmer for around 10 minutes, or until thickened and the pearls appear to look more translucent. Stir frequently so that the tapioca does not burn at the bottom. Remove from heat and add in vanilla, and stir. Pour into individual cups or into a large bowl and allow it to cool. Then place into the fridge to chill. It will thicken after chilled, then you can serve it with some fresh fruit, a drizzle of condensed milk and enjoy!
