Ep. 344: Louisiana Shrimp and Sausage Jambalaya

Hello and Happy Mardi Gras/Carnival my Friends!

Today’s Recipe I am making one of my favorite Creole and Cajun Dishes off all time, Shrimp and Sausage Jambalaya!

This dish is all in one pot and it is full of Louisiana flavor from the Trinity to Andouille Sausage to the Shrimp! We will bring the taste of New Orleans right into your Kitchen!!

Olive Oil
1 pound andouille sausage, cut into rounds
1 large onion, chopped
1 bunch green onions, chopped + more for garnish
3 stalks celery, chopped
2 green bell peppers, chopped (or any color)
Kosher salt and 1/8 tsp (Pinch) red pepper flakes
3 garlic cloves, minced
2 (14.5 oz) cans diced tomatoes
1 tsp cayenne pepper
1 tsp onion powder
1 tsp garlic powder
2 cups long grain white rice, washed
2 bay leaves
1 bundle fresh thyme, washed
1 pound medium-large shrimp, peeled and deveined, (tails/shells removed for shrimp stock)

For the Shrimp Stock

Add shrimp tails/shells into a large pot fill with water, bring to a boil. Then turn the heat off and let it sit for 15-20 minutes. Strain, discard the tails, and set the stock aside.

For the Jambalaya

Coat a large pot with olive oil and turn the heat on medium-high. Add the andouille sausage and cook for 4-5 minutes or it starts to brown. Then add onions, green onions, celery, peppers, kosher salt and red pepper flakes to the sausage, cook for 6-7 minutes or until vegetables are soft and translucent. Then add garlic and cook for another 2-3 minutes. Next add and stir in the diced tomatoes along with the juice, cayenne pepper, onion powder and garlic powder. Then add and stir in the rice. Add 4 cups of the shrimp stock, bay leaves and thyme bundle to the rice mixture. Season with kosher salt and taste. Cover, turn the heat up to high, bring to a boil, then turn the heat down to medium-low and simmer for 25 minutes. Then stir in the shrimp and cook for another 5-7 minutes until shrimp turn pink and cook through. (Remove thyme stems and bay leaves). Serve and garnish with chopped green onions and enjoy.
