Tip of the day:
Pre Heat the oven to 200 F degrees. Add the food serving dishes.(I always get oven safe dishes) Cover with foil. Keep the food in the oven. It will keep it warm until you’re ready to serve.

Chicken Curry:
Ingredients:
2 Whole Chickens.
1 cup Yogurt.
2 tsp salt.
1 tbsp minced Ginger.
1 tbsp minced Garlic.
2 Tomatoes.
2 Green chili pepper.
1 tbsp Red chili powder.
1 tbsp Cumin seed powder.
1 tbsp Coriander powder.
1 tbsp Garam masala.

Recipe:
In a cooking pan add oil. Add chicken. Fry until it changes color. Add half yogurt and fry. Fry for good 2-3 minutes. Add salt. You can see the chicken changes color and it looks more brown. Add ginger-garlic. keep frying. Add tomatoes and green chili pepper. (I removed the skin of the tomatoes). Add red chili powder, coriander powder and cumin seed powder. Mix it well. Cover and cook for 7-10 minutes. Add the rest of yogurt. Add garam masala. Cover and cook for 5-7 minutes. It’s Ready. Add fresh cilantro.

Meatballs Curry:
Ingredients:(Meatballs)
1 lbs Minced Beef.
1/2 Onion.
3 Garlic Cloves.
1/2 inch Garlic.
1 Green chili pepper.
Cilantro.
1 Egg.
1 tsp Salt.
1 tsp Red chili powder.
1 tsp Coriander powder.
1 tsp Cumin seed powder.
1 tsp Sumac.
1 tsp Crushed Red pepper.

Ingredients: (Curry)
Pinch of Cumin seeds.
1 Bayleaf.
1 Cinnamon stick.
2 Green Cardamoms.
1 Star Anise.
1 Onion.
1 tbsp Minced Ginger-Garlic.
2 tbsp Yogurt.
2 Tomatoes.
1/2 tsp Salt.
1/2 Red Chili powder.
1 tsp Coriander powder.
1 tsp cumin seed powder.
1 Green Chili pepper.

Recipe:
In a frying pan add oil and chopped onion. Fry until it’s translucent. Add onion to the food processor. Add garlic, ginger, cilantro. and green chili pepper. Blend everything. Add minced beef, egg, salt, red chili powder, coriander powder, cumin seed powder, sumac and red crushed red pepper. Blend everything together. Make meatballs. (I use tbsp soon to measure the mixture so my meatballs are same size). Fry the meatballs for 3-4 minutes on all sides. Remove from the pan.
In a pan add oil. Add cumin seeds, bayleaf, cinnamon stick, green cardamom and star anise. Fry for a minute. Add onion. Fry until it’s translucent. Add minced ginger-garlic. Fry for minute. Add yogurt. Cook for 1-2 minutes. Add tomatoes. Cook for 2-3 minutes. Add salt and red chili powder. Cook masala for 5-7 minutes or until the oil separates. Add coriander powder and cumin seed powder. Add meatballs. Mix it well. Add little water. Cover and cook for 7-10 minutes. Add fresh green chili pepper. Enjoy.

Aloo Palak:
Ingredients:
4 lbs Spinach.
2 Potatoes.
1 Onion.
1 Tomato.
1 tsp Salt.
Pinch of Cumin seeds.
1 tsp Salt.
1 tsp Red Chili powder.
1 tsp Coriander powder.

Recipe:
Wash the spinach realy good. Boil the spinach. Let it cool a bit and blend it. keep it aside.
In a pan add oil and chopped onion. Fry until soft. Add cumin seeds. Fry until it’s light brown. Add tomato. Fry for a minute. Add Salt, red chili powder and coriander powder. Cook the masala for 2-3 minutes. Add potatoes. Fry for 2-3 minutes. Add little water. Cover and cook 3-5 minutes. Add the spinach. Mix well. Cover and cook for 3-5 minutes. Enjoy.
