Gemista – Stuffed peppers and tomatoes Greek recipe in wood fired oven | Grill philosophy

Gemista, Greek traditional recipe – Stuffed peppers and tomatoes with rice; this is probably the most popular summer recipe in Greece. It’s a widely-cooked dish, with many variations and taste results. Here, we’re going to show one of the traditional variations for this recipe. The filling and herbs will flavor this dish, yet the rice variety is equally important. Some extra interventions will also enhance the flavor, but there are two main factors that will definitely make all the difference: the use of a clay baking tray and the slow-cooking process in the traditional wood-fired oven.
