The traditional recipe of Gemista are delicious and easy to make.
These tasty stuffed vegetables are made with rice, olive oil, feta and other vegetables like green peppers, red peppers, tomatoes. Other vegetables like eggplants can also be stuffed with rice.
It’s a gluten-free vegetarian Greek dish natives & tourists love. When you learn how to cook this traditional healthy Greek food, you will impress friends & family.

When these stuffed vegetables are served, the colors on your dish make your mouth water.
You will stuff: 5 red peppers Italian style or other (u can use other colored peppers & eggplants)
2 green peppers
For the Stuffing : I advise u to get a Multi Chopper. It’s fast & u can use it to chop anything.
-2 chopped zucchinis (optional: also, 1 small chopped eggplants)
-2-3 med. chopped onions
-3 chopped garlic cloves
-1 1/2 – 2 cups water
-1/2 tsp salt – pepper ( to taste )
about 100 gr Greek feta (optional – gives a great taste)
-1/2 cup Greek olive oil to stir fry all of these
– 1 handfull chopped raisins or 1/2 tsp sugar
-1 full tbsp white GLAZED rice for each veg. (the standard is 1 tbsp rice for
each veg – so here it’s 1 x 9 vegs = 9 tbsp rice)
-1-2 handfulls fresh parsley & 1 small handfull spearmint too (u can add
either one or both). For a good taste, don’t use dry herbs!
-2 tomatoes reduced/blended in the Multi
For the baking pan: After u finished the above, add them in the pan:
-2 med. thinly sliced potatoes
-1 cup of water
– 3/4 cup olive oil
