KETO FRIENDLY RECIPE -Cauliflower Mock Potato Salad – Cook With Me!

Cauliflower Mock Potato Salad Recipe
Ingredients
1 Large head of Cauliflower rinsed and cut into florets
1/2 cup May of your choice
1 heaping tsp. mustard
1/2 crumbled blue cheese or shredded cheese of your choice
6 slices cooked bacon, crumbled
1/2 red onion, chopped
1 Tbsp. fresh dill, minced
1 – 2 hard boiled eggs diced
Salt and Pepper to taste
Directions
Take large head of cauliflower, rinse and chop into florets. Put cauliflower into large sauce pan and add water to the pan ( just enough to steam cauliflower). Cover cauliflower and bring to boil. Steam the cauliflower for about 3 – 4 minutes. You want the cauliflower to be slightly firm but not too soft so don’t over steam it. Once Cauliflower is steamed drain in colander and rinse with cold water. Let cauliflower chill in refrigerator for about a 1 – 2 hours. Once chilled place in large mixing bowl and add all other ingredients. Toss everything together until all ingredients are fully incorporated. Let chill in refrigerator until ready to serve.
