LUNCH IDEA 1

Roast butternut squash:
1 small-medium butternut squash (peeled & chopped)
1 tsp cumin
1 tsp paprika
2 tbsp melted coconut oil
sea salt and black pepper (to taste)

Kale salad:
3 cups kale (remove stalk and tear into small pieces)
1 heaped tbsp. light tahini
1 lemon (juice)
1 tsp. dried oregano
pinch cayenne
1 tbsp. tamari

Serve with rice or quinoa

LUNCH IDEA 2

Sweet potato, spinach and chickpea curry:
1 can chickpeas or 1 ½ cup cooked chickpeas
1 small sweet potato
150g baby spinach
200ml coconut milk
250ml passata
200ml water
1 tbsp dried thyme
1 tbsp garam masala
1 tsp turmeric
1 tbsp. cumin
1 tbsp coconut palm sugar (or sweetener of your choice)
pinch cayenne
sea salt & black pepper (to taste)
1 ½ tbsp. coconut oil

Serve with rice or quinoa

LUNCH IDEA 3:

Beetroot hummus:
1 can chickpeas or 1 ½ cup cooked chickpeas
2 tbsp. hummus
2 garlic cloves
1 lemon (juice)
1 small beetroot (peeled & grated)
sea salt (to taste)

Herby quinoa salad:
1 ½ cup cooked quinoa
¼ red onion
1 large tomato
handful fresh herbs (mint, coriander and parsley)
½ lemon (juice)
1 tsp. tamari
black pepper (to taste)
1tbsp. olive oil

Wraps (of your choice)

LUNCH IDEA 4

Pasta:
3 cups cooked pasta
1 cup chopped broccoli
1 stalk celery
2 carrots
½ red onion
handful fresh parsley
black pepper (to taste)

Tahini pasta dressing:
3 tbsp. tahini
1 tsp. mustard
sea salt (to taste)
1 lemon (juice)
3-4 tbsp. water

LUNCH IDEA 5

Black bean & quinoa filling:
1 can or 1 ½ cup cooked black beans
1 red onion
3 garlic cloves (minced)
handful fresh coriander
1 tbsp smoked paprika
1 tsp dried thyme
sea salt & black pepper (to taste)

2 x small-medium sweet potatoes
