Tomato Basil Three Cheese Tortellini Soup Recipe | August Cooking | Vegetarian Soup Recipe | How to make soup | Easy soup recipe
2 T EVOO
2-3 cloves of garlic minced
2 cups water
1 quart of vegetable or chicken broth
1 can of drained and rinsed kidney beans
1 can peeled and chopped tomatoes
9 oz. refrigerated three cheese tortellini
2 cups of fresh basil or spinach
Shredded parmesan cheese and salt and pepper to taste
How to Prepare:
Add the EVOO to a soup pot and brown the garlic over medium heat. Add your water, broth, and beans. Bring to a boil and add your tortellini. Boil for about 7 minutes until the pasta is nice and tender. Add your basil and boil for 2 more minutes. Add a little parmesan cheese and eat! Sometimes I put garlic flavored croutons in it.
In this video, I show you how to make Tomato Basil Three Cheese Tortellini Soup. This is one of my favorite soups on a frigid winter day. It is very filling and warms your bones. This is a vegetarian soup recipe that everyone seems to love. You could also substitute spinach for the basil if you like. I hope you give this one a shot and thanks for watching my video.
