Breakfast Granola Bowl
– Set Greek Yoghurt or Dairy-free yoghurt alternative
– Fresh Berries (Strawberries, Blueberries, Raspberries etc.)
– Agave syrup for natural sweetness
Vegetarian Chilli Con Carne
Chop the onion into tiny cubes, fry in a generous amount of olive oil, caramelise for about 5 minutes on a medium-high heat. Add salt & pepper. Chop the mushrooms, fresh cherry tomatoes, crush 2 cloves of garlic and add to the pan with the onions.
Meanwhile, add the rice on to boil. Get a saucepan filled with water, sprinkle of salt and add the rice so there is about 2 inches of water above the rice and put on a high heat to boil until the water evaporates. (Once evaporated add a lid, put on a low heat and steam until soft….don’t take the lid off until you’re ready to serve).
Slice the peppers into strips, add to the pan. Season with a sprinkle of cinnamon, paprika and chilly powder. (I like to add quite a lot for flavour & heat).
Add half a bag of Quorn frozen mince and 3-4 table-spoons of tomato puré to the veg and let cook together for 5 minutes. Add 2 tins of chopped tomatoes, 1 can of kidney beans and let the sauce simmer for around 20 minutes on a low heat.
While simmering add 1 table spoon of each of the following: Bisto gravy granules, Worcester sauce and maple syrup. Stir into the sauce and turn off once the vegetables are soft.
Serve up with optional: cheese, jalapeños and greek yoghurt/sour cream/guacamole! Enjoy lovess xxx
